Ozeki buys Yamada-Nishiki rice in Hyogo Prefecture, which is Japan's largest sake-producing region and Yamada-Nishiki's largest rice-producing region. “Yamada-Nishiki” rice is carefully polished using traditional Ozeki techniques, perfected over hundreds of years, which preserve the smooth flavor and aroma of the rice.
